Can you use olive oil to make fried foods?

Fried foods are unhealthy, which seems to have become a common sense, but a new issue of the British Medical Journal published an article saying that a Spanish study showed that long-term consumption of olive oil or sunflower oil does not produce fried foods. Lead to increased health risks such as coronary heart disease.

Institutional researchers at the Autonomous University of Madrid reported that they tracked the eating habits and health status of over 40,000 Spaniards from 1992 to 2004. Spain is a typical "Mediterranean diet" country. The oils used in its recipes are mostly olive oil or sunflower oil, so the fried food here is not the same as the oil used in many other places.

The analysis shows that in Spain, long-term consumption of fried foods will not increase the risk of coronary heart disease, nor will it increase the risk of death. There is no link between the fried foods and health risks that have been found in many parts of the world.

Researchers therefore believe that people generally think that fried foods are unhealthy because the oils used to make these fried foods, such as lard, contain more saturated fatty acids, which can easily lead to diseases such as coronary heart disease. While olive oil and sunflower oil are rich in unsaturated fatty acids, fried foods made from them do not have this health risk.
