Einstök beer is Iceland's top choice, and it was just a matter of time before we decided to incorporate it into our cod fillets. We highly recommend using their Icelandic White Ale—it’s uniquely flavorful and pairs beautifully with fish. (If you're 21 or older, don’t forget to save a glass for yourself after cooking).

This hearty dish is perfect for dinner or even a lazy Sunday afternoon. The combination of potatoes and a light garlic aioli complements the fish perfectly, making it a delightful meal that’s both satisfying and easy to prepare.

Ingredients

Cod Fillets

  • 12 oz cod fillets
  • 1 ½ cups Einstök beer
  • 1 cup all-purpose flour
  • 4 cups frying oil (olive, peanut, or canola oil work well!)
  • Sea salt

Rosemary Roasted Potatoes

  • 6 small potatoes
  • 3 ½ tablespoons oil
  • â…” cup fresh rosemary
  • Sea salt

Garlic Aioli

  • ¾ cup light mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt (to taste)

Instructions

For the Cod Fillets

  1. In a large mixing bowl, whisk together the Einstök beer and flour until smooth.
  2. Cut the cod fillets into four equal portions and gently immerse them in the batter.
  3. Heat the frying oil in a deep fryer or pan to medium-high heat.
  4. Once the oil is hot, carefully lower the battered fillets into the oil and fry for about 4 minutes or until they turn golden brown.
  5. Using a slotted spoon, remove the fillets from the oil and place them on paper towels to drain any excess oil.
  6. Let the fillets rest for 4 minutes, then season generously with sea salt.

For the Roasted Potatoes

  1. Preheat your oven to 365°F (185°C).
  2. Wash and peel the potatoes, then cut them into quarters.
  3. In a large bowl, toss the potato quarters with oil and chopped rosemary until evenly coated.
  4. Spread the seasoned potatoes on a baking sheet and sprinkle with sea salt.
  5. Bake in the preheated oven for 45 minutes, or until the potatoes are tender and crispy around the edges.

For the Garlic Aioli

  1. In a small bowl, mix the minced garlic with the mayonnaise until well combined.
  2. Add lemon juice and a pinch of salt to taste, stirring until smooth.
