1. Production Process:

The production of fig powder follows a well-structured sequence: raw material selection, processing and juice extraction, filtration and clarification, concentration, spray drying, cooling, and packaging. Key Process Points: Raw Material Selection: The process begins with choosing high-quality 6–7 mature fresh figs or dried figs. The mixture is heated to 85–90°C and maintained at that temperature for 20–30 minutes. Once heating is stopped, the mixture is left to rest for 24 hours, allowing the juice to fully extract. The juice is then squeezed out using a press. Filtration and Clarification: The extracted juice is first passed through a sieve filter to remove large particles. It is then clarified either naturally by settling or using enzymes to speed up the process, resulting in a clearer liquid. Concentration: This stage involves reducing the water content to increase the solids. Two methods can be used: atmospheric concentration and vacuum concentration. For atmospheric concentration, the juice is heated in a double-layer stainless steel pot with a steam pressure of 2.5 kg/cm². It is important to stir continuously during this process to prevent burning and ensure even evaporation. The goal is to reach a solid content of 28%. Each batch should not be over-concentrated, and the process typically lasts around 40 minutes. Vacuum concentration, on the other hand, is performed at a lower temperature (around 50°C) under reduced pressure, which helps preserve the delicate flavors and nutrients. Spray Drying: Once concentrated, the juice is spray-dried using high-pressure equipment. The feed temperature is kept between 50–60°C, and the high-pressure pump operates at 180 kg/cm². To improve the flowability and stability of the powder, 0.5% dextrin is added as a drying aid. The air inlet temperature is set at 120°C, while the outlet temperature is maintained between 75–78°C to ensure efficient drying without overheating the product. Cooling and Packaging: After spray drying, the fig powder is rapidly cooled to prevent clumping and maintain its quality. It is then packaged in airtight containers and sealed to protect it from moisture and contamination, ensuring a long shelf life and maintaining its freshness and flavor. This detailed process ensures that the final product is of high quality, rich in nutrients, and suitable for various food and beverage applications.
